Some restaurants are owned; this one is kept. The sombrero over the door was painted by hand, the cactus mural went up brushstroke by brushstroke, and the tamale recipe has been in the family for around a hundred years — shredded beef and pork, wrapped in corn husks the way grandma wrote it down.

The kitchen runs on the old rules: rellenos roasted and stuffed to order, green chili pork simmered slow, fish tacos made the way they make them in Ensenada. And before any of it lands, every table gets the house welcome — a basket of chips with red salsa, green salsa, and warm bean dip.
